Aiming for elegance, restraint and the ability to age, acid is bright and there’s generosity of flavour. Typically it shows white flowers, citrus, and nectarine notes. The 2021 vintage was one of the best on record. Ripe and healthy fruit resulted in a beautifully balanced M3, with great flavours, and fresh acidity right through to the long finish. Hand picked and whole bunch pressed. Fermented and matured on lees in French oak barriques and puncheons.

he fruity Kabinett from the Bernkasteler Badstube shows cool fruit and floral-spicy aromas in the fragrance. On the palate, delicate and elegant tropical fruit with herbal tart notes. The zesty acidity supports the aromatic development and provides excellent transport of flavors and minerality. The gossamer sweet fruit seems finely placed and is the perfect counterpoint to the grippy and very present slaty minerality. Shows animatingly playful on the finish with a spicy-sweet aftertaste. Delicious!

Tournon by M Chapoutier Shays Flat Shiraz 2015
Named after a locale in the Australian Pyrenees, Shay’s Flat is produced on an east facing ridge in the southern foothills. It appears as a natural amphitheater with red soils of schist, quartz and rich clay. The vineyard features ten hectares of Shiraz in two parcels.
The Shay’s Flat vineyard sits at an altitude of 350m in the Western Pyrenees Ranges and is organically farmed. The wine is aged in French oak barrels for 12 months. A small proportion of the wine is aged in tanks to preserve the freshness of the flavours.
Complex nose of black fruits (cheery, blackberry) with hints of tobacco (havana cigar). On the palate, aromas of black fruits and liquorice with supple and delicate tannins.
